We sometimes tend to think that making our own pancake batter is difficult ... or even worse, it could turn out to be a disaster! So more often than not, we end up picking a pancake mix off the shelf.
After a couple of tries with various recipes and customizing it to the ingredients available here in India, we have arrived at this astoundingly easy recipe that makes tasty, fluffy pancakes!
Ingredients:
Wet ingredients:
Milk - ¾ cup
Vinegar – 1 tbsp
Butter – 2 tbsp
Egg - 1
Dry ingredients:
Refined flour (Maida) – 1 cup.
Tip: To make it wholesome and nutritious, substitute a part or whole of the refined flour (maida) with whole wheat flour (Atta). This would change the texture of the pancakes.
Sugar – 2 tbsp
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – ¼ tsp
Method:
- Combine ½ cup milk and 1 tbsp vinegar. Set aside.
- Slightly heat ¼ cup milk and add the butter. (This is for the butter to melt). Add this to the milk and vinegar mixture.
- Beat the egg into the above mix.
- Mix all the dry ingredients into another bowl and gradually add it to the above wet mixture, using a whisk.
And voila... the fluffy pancake batter is ready!
Makes approximately 10 pancakes.
